More of Travis' birthday weekend.....

On Sunday we had a small family birthday party for Travis with my parents, my sisters, Uncle Charlie and cousins Annabelle and Paxson.  A good time was had by all as always and here are the pictures to prove it.  (though I failed to get pictures of anyone but Travis except the last picture-lol)

Menu June 5-11

Evan is out of town this week so I am trying a few new recipes that he wouldn't be 100% into based on the ingredients.  Hungry Girl recipes are in BOLD and linked if available.  Have a great week!

Saturday-  Grill or out since we have Travis' black belt ceremony at 4pm

For those that are counting....this makes recipes 24, 25 and 26 out of the "300 under 300" cookbook.  I feel like it should be more but my notes don't lie!  :)  There are a LOT of recipes to go!

Hungry Girl's Cheesy Chicken Enchiladas

I made this on Thursday night but that was the the same night that I dropped my iPhone in my water glass.  The only picture I had taken of my meal was on my phone so I wanted to wait on this entry until I could see if the picture was retrievable.  As you can see it was.  :)  I kind of winged this recipe and logged it on myfitnesspal.com on a per ingredient basis.  The recipe itself didn't have much to it.  Just corn tortillas (more on that later), chicken, fat free cheddar cheese, sauteed onion and enchilada sauce.  I didn't think that sounded very filling so I added chopped black olives and black beans to the dish.  The original recipe has 252 calories and 3.5 grams of fat.....my version had 339 calories and 14 grams of fat.  Most of the extra fat came from the reduced fat cheese I used (fat free is yucky and hard to find) and the black olives.  The extra calories were mostly from the addition of the beans.  Now will all of that being said I wasn't a huge fan of this dish.  I know it's because I really don't like corn tortillas--I prefer flour ones by a mile.  Evan prefers corn so he LOVED this dish.  Travis is more in my camp so he liked the inside part but not the outside part.  Keeping the enchiladas rolled up didn't work so well either so I rolled my portion of the meal and made the rest as a enchilada bake of sorts.  Good luck!

PLOP

Unfortunately that was the sound I heard last night when my iPhone somehow slipped into my water glass.  *&#@$&!!!!  I pulled it out immediately of course and shook off the water, dried it off etc.  It seemed to be working but seconds later the screen started to do dark--I could barely see the icons and then about 5 minutes later it started to flash.  UGH!  I popped it into a container of uncooked rice and let it sit overnight.  I know I was supposed to wait 24 hours but I couldn't stand it.  Just a little bit ago after about 12 hours I puled it out and it seems to be back to normal!  The screen is brightly colored and the buttons seem to all be working!  I haven't tried to make a call or anything yet but on the surface it seems to be repaired.  I was able to power it down before popping it back into the rice---this is a major deal since the power down feature hasn't worked in about a year (probably because of too many drops on the floor).  I will check it again tonight and see if the phone part still works!

I feel totally naked without my phone already today.  I can't check in at the gym, constantly check Facebook, play words with friends or look at my to do lists!  The lack of to do lists is almost killing me actually.  I had to try and remember all of the things I need at Costco to write on an actual piece of paper?  What is that?  LOL

Hungry Girl's Pepperoni Poppin Veggie Calzones

So let me just start out by saying these were DELICIOUS!  I have to start with that since well they were and it was worth the pain in the a$$ they were to make.  Maybe if I had made calzones before it wouldn't have seemed so tedious but it seemed to take me forever to get these suckers in the oven.  As always I left out the mushrooms and I doubled the garlic.......mmmmm.....garlic.  I only ate one (though I wanted to eat ALL of them) and I had 1/2 an apple and a cup of butternut squash on the side.  If you are feeling adventerous here is the recipe.  Next time I make it I may just make it as an actual pizza--might be a little easier that way.

Delaplane Strawberry Festival

Sorry I am just now getting around to posting these pictures.  On Saturday right after the Cascades fun run we packed everyone into Mandy's van and drove out to Delaplane for their strawberry festival.  I had never been to it before but Kristen had alerted me to a Groupon deal that was 1/2 off a car load of people on admission.  It was now going to be $10--which worked out great since I had $10 in Groupon dollars that I had to use up! So it was free for us.  :)  I think all of the kids had a BLAST!  Highlights were all of the kid games, the flea circus and of course the food.  Somehow I was able to not eat any of the delicious smelling fair food they had.  I wanted to eat a corn dog, funnel cake, strawberry shortcake, sweet potato fries etc etc etc.  Enjoy the pictures!

Hungry Girl's Dreamy Butternut Chicken Foil Pack

This was our dinner last night and I am a definite fan!  I love butternut squash but Evan doesn't like it so I never cook with it.  I had wanted to try this recipe for awhile but his aversion to the squash had made me push it off.  I finally said "what the heck".  Evan wasn't too thrilled about it when he saw what it was--I told him he could have one "no thank you bite" like Travis if he wanted to.  Once he tried it he actually liked it!  He wasn't a fan of the onions and kind of ate around them but the rest of it was a hit!  Travis....well not so much.  He ate the chicken and complained bitterly about the rest.  About 30 minutes later he finished his plate and told me how good it was and wanted to have it again for dinner tonight.  lol  This was also my first foray into peeling and cubing a butternut squash.  Normally Wegmans has it pre-cut in their veggie section- I see it every time I'm there and wouldn't you know the one time I want to buy it---they don't have it.  Oh well.  The Hungry Girl cookbook thankfully had a "how to tackle the squash" page.  It worked like a charm.  I served it with a fruit salad and a toasted bagel thin in case you were wondering.  Enjoy!
